On Sunday nights, I typically make some sort of baked pasta dish – for the longest time, I was afraid to try lasagna because it seemed so daunting until I discovered just how easy it could be once you got the pattern down and found the right mix of ingredients. This is one of my go-to lasagna recipes for Sunday night – it is easy to throw together, features my favorite tomatoes and is just so tasty and comforting (oh and super cheesy, I am from Wisconsin, afterall!)!
Cheesy Gluten Free Lasagna Recipe
What do I need?
- 1 lb ground turkey
- 1 lb ground Italian Sausage
- 1 (28 oz) can Red Gold® Crushed Tomatoes
- 1 (14.5 oz) can Red Gold® Stewed Tomatoes
- 1 (14.5 oz) can Red Gold® Diced Tomatoes with Basil, Garlic & Oregano
- 2 Tablespoons sugar
- 1 Tablespoon Italian seasoning
- 1 Cup chopped spinach
- 1 box gluten-free lasagna noodles (9-12 noodles needed), cooked according to box time minus 1 min
- 1 carton Ricotta cheese
- 1 Package Provolone Slices, diced
- 4 Cups Shredded mozzarella cheese
- 3/4 Cup grated Parmesan cheese
What do I do now?
Preheat oven to 350 F.
Brown your turkey and Italian sausage. Once cooked through, add in all three cans of tomatoes and mix well. Add sugar and Italian Seasoning. Allow to simmer for 15 minutes and then add chopped spinach –simmer for another 15-20 minutes.
In a lasagna pan, coat the bottom with your sauce mixture and then sprinkle with Parmesan cheese. Arrange four noodles on top of sauce overlapping where needed and covering the entire bottom. Carefully spread in ½ of the ricotta cheese container and 1 ¼ cup of mozzarella. Layer in sauce and then on this sauce layer, top with the chopped provolone and sprinkle with Parmesan. Start again with the noodles and repeat until the pan is full. Top with the last of the sauce and then evenly spread the remaining cheeses.
Baked at 350 for 30-35 minutes until cheese is bubbly and browning. Allow to stand for 10 minutes or so before serving.
Serves 12 and freezes well!
